Pollen is the thin layer of dust present on flowers, which is collected in the form of "balls" by bees and transported inside the hive.

It is a complete food since it contains proteins, vitamins, enzymes, fibers, amino acids, carbohydrates, all assimilable by man, an almost incomparable nutritional heritage. In particular, mineral salts and trace elements are found in it: phosphorus, magnesium, potassium, manganese, silicon, copper, iron, zinc, sodium, chromium, calcium, enzymes, almost all vitamins of group B (B1, B2, B6, B12 ), vitamin A, PP, C, H, E. It also contains 20 of the 22 essential amino acids and fatty acids such as Omega 3 and Omega 6. It contains about 30% protein, as many legumes contain. The antioxidants contained (caroteinoids, polyphenols, phytosterols) in 15/20 g of pollen are equivalent to 900 g. of legumes and 15/20 kg of fresh fruit.
